Meet Takashi Ito, our Executive Chef who oversees all food served in the hotel including banquet cuisine, Inn-Room dining and of course AURA waterfront restaurant + patio.
That’s right our Chef Ito has a law degree but found his passion in the kitchen.
Chef Ito hails from an impressive culinary history with time spent at the Fairmont Palliser in Calgary and then in Victoria he took over the helm at the Empress Hotel.
Chef Ito is excited to be working for a smaller boutique style hotel, where he can set his own individual stamp on dining in Victoria, BC and mentor a dynamic team of young chefs.
“I am in love with Victoria and Vancouver Island. The ingredients and culinary talent available to us are truly amazing. To be here where I can indulge in my love of wine and local ingredients is a dream come true.”
Another talent Chef Ito brings with him is a passion for ice carving and he has competed across the country and around the world – both with his carving and his cooking.
And while Chef’s inspired dishes have made their way to AURA’s menu, including an increase in vegetarian and gluten free options, he is launching new menus seasonally to be sure he captures the very best of the Island’s seasonal bounty.
